Roasted Salmon with Lemony Arugula Salad

  • Norwegian Salmon fillets, two 6-8OZ pieces, skin on.

  • Mediterra Spice Mix- 1 full tablespoon

  • 1 lemon (Try to use a real lemon not a ready lemon juice)

  • 2 tablespoons butter

  • Baby Arugula

  • Red Onion or Sweet Onion

  • Shredded Carrot

  • Leaf Lettuce

  • Tomatoes

  • Alternatively, you can order the garden salad from our online store, ready made with the dressing on the side.

Salmon Preparation:

  • Preheat the oven to 400F.

  • Line up your oven tray with aluminum foil and wrap the tray with it.

  • Put another layer of foil with parchment paper lined up on top so your food does not touch the foil. (This cooking method will be shown in detail on our online classes, stay tuned.)

  • Place the salmon fillets on the parchment and sprinkle or rub the herb mix all over the fillets.

  • Lift the sides of the second layer of the foil around the fillets to create a deep bowl that will keep the sauce in.

  • Melt the butter and whisk it with the lemon juice.

  • Pour the lemon butter sauce over the salmon and make sure the sides of the foil is high enough to keep the sauce with the fish.

  • Place the tray in the oven and cook about 20-25 minutes, depending on the thickness of the fillets adjust time to reach desired cooking level.

Preparing the salad:

  • Wash the leaf lettuce thoroughly.

  • Chop the lettuce by lining up the leaves together and cut thin slices.

  • Add arugula

  • Using a mandolin shred the onion in thin strips.

  • Add shredded carrots

  • Mix lemon juice and extra virgin olive oil

  • Dress the salad, salt and pepper to taste and decorate with sliced tomatoes.

Serve the salmon with the salad and enjoy this #delicious and #healthy meal filled with #protein.
